We have been told from a young age to eat our veggies. This time, your parents were right! We should be eating veggies at every meal...and then some. Veggies provide us with the vitamins, antioxidants, and minerals needed to be healthy and happy. The best way to eat your veggies is multi-colored. Eat all the colors of the rainbow. Each color will provide you with different nutrients. Not a veggie fan? Start slow. Pick 1 new veggie a week and discover new ways to prepare it. Here are some creative ways to get your veggies in.
Tip #1
Make a veggie base for your soups. Cook them down and puree them. You are still getting great vitamins without the texture. Mix up the veggies, try new veggies each time.
Tip #2
Experiment with veggie noodles. You can make just about anything into a noodle, zucchini, carrots, sweet potatoes, etc Not wanting to make them yourself? Most grocery stores have already done the work for you.
Tip #3
Turn your veggies into a smoothie. Adding fruit to the mix like pineapple will take some of the bitterness out. Spinach is a MUST in your smoothies! The greener the smoothie the better. Full disclosure, smoothies are not the best way to get the nutrients. It takes out much of the fiber and can spike your sugar. Although not the best choice, it's better than not getting them at all
